There are certain tequilas that don’t try too hard, and Aplomo Blanco is one of them. The brand name literally means “aplomb” — confidence, composure, steadiness. And you know what, that fits. This bottle doesn’t scream, it doesn’t showboat, it just sits there like the guy at the poker table who quietly keeps raking in chips while everyone else argues about who’s bluffing.
On the nose and palate, cooked agave shows up early and keeps the spotlight. Right behind it is cinnamon, not the sugary kind you’d sprinkle on a donut, more like the warm kick you get from biting into Big Red gum after thinking, “Yeah, I can handle this.” Add in a little anise bitterness, some heat, and even a creaminess that sneaks in, the kind of texture that makes you double-check that this really is just a blanco.
It actually reminds me a lot of Madre Blanco — earthy backbone, steady heat, and that same confidence to let natural flavors shine without masking them. The minerality makes an appearance too, though the finish doesn’t hang around very long. You taste it, you enjoy it, and then it’s gone, like a funny one-liner from a friend who knows not to repeat the joke twice.
Production-wise, Aplomo is made from 100% Blue Weber agave in Jalisco’s lowlands. The piñas are cooked in traditional brick ovens, crushed with roller mills, fermented in stainless steel tanks, and then double distilled. No shortcuts, no additives, just classic methods with a modern polish. That might explain why it drinks so clean and balanced, even while tossing in some spice and bitterness to keep things interesting.
Is it perfect? Not quite. That touch of anise bitterness might not be everyone’s friend, and the finish is shorter than I’d like. But overall, this is a solid pour with character, steady in its own lane.
