Cooked agave is still driving the bus, but the barrel time adds pepper, caramel, and baking spices. It is the difference between black coffee and a latte. Same punch, but now there is a little sweetness and froth making it feel smoother. And that creaminess again — Aplomo clearly likes to bring dessert to dinner.
